Halloween is Britain’s third biggest commercial celebration, after Christmas and Easter but every year a shocking number of edible pumpkins go to waste.

More than a quarter of all Halloween pumpkins end up in landfill – that’s 18,000 tonnes – and many more go straight into the compost bin (or worse into landfill) without being eaten.

Don’t be tricked, pumpkins are not just a decoration but a very delicious treat after Halloween. They can be made into a number of recipes, including cakes, pies, breads, curries and soups, so why not make the most of your pumpkin.

Councillor Budge Wells, Deputy Executive Member for Community Services at Central Bedfordshire Council, said:

“If we are to tackle the seven million tonnes of food and drink wasted from British homes each year, we must recognise that pumpkins are a valuable source of food and not just for decoration. Halloween is a great opportunity to help our children understand where food comes from and involve them in cooking a simple meal with their pumpkin carvings.”

“We encourage families to keep food waste to a minimum all year round. Festivals such as Halloween can be expensive, so it’s particularly important that the public make the most of their money and their food. Half of people in the UK have never eaten pumpkin before, and a survey found that 6 in 10 said they wouldn’t know how to cook pumpkin.”

Spicy Pumpkin SoupStop Halloween Food Waste Horror : Pumpkin Recipes

It’s sweet and spicy, this pumpkin soup is a Autumn favourite and perfect if you’re making soup for the first time, as well as for seasoned cooks. It works really well if you roast the pumpkin and sweet potato first. Delicious!

INGREDIENTS
1/2 medium pumkin or 1/2 butternut squash
1 sweet potato
1/2 red pepper
1½ cups (375 ml) of water
1 cup (250 ml) full fat milk
1 red chilli
Pinches of salt and pepper for seasoning
INSTRUCTIONS
1. Preheat the oven to 190 degrees Celsius.
2. Remove the pumpkin flesh with a spoon, and peal the sweet potato.
3. Chop the pumpkin and sweet potato into 1 inch cubes.
4. Slice the red peppers and put all vegetables on a roasting tray, with a drizzle of oil.
5. Place in the oven to roast for 30-40 minutes, until soft.
6. Allow all the vegetables to cool a little.
7. Once cool enough to handle, add the pumpkin, sweet potato and peppers to a blender with the water, 8. milk and diced chilli, and blend until smooth.
9. Pour into a saucepan and heat until piping hot, adding more water if you like a slightly thinner soup.
10. Season to taste with salt and pepper.
11. Chef’s tip: To give the soup a sweeter flavour, roast the pumpkin and sweet potato until they are dark and caramelised. It is important to allow the veg to cool before putting in the blender as the pressure of the steam could create a mess in the kitchen!
12. Use up: Use up some uncooked veg that you may have left over from another dish.
13. Variations: To make this a more balanced dish, you can serve with garlic croutons or a few slices of bread and butter. You can also vary the ingredients buy using butternut squash instead of, or as an addition to, the pumpkin!
14. Extra flavour: Adding your own mix of herbs and spices can really enhance this dish, such as coriander, cumin, oregano or fennel seeds.
Vegan options: To adapt this dish for vegans, replace the milk with vegetable stock or coconut milk, both of which will create different flavours.

Allergy advice: This versatile dish is easily adapted to avoid allergens and be suitable for most diets.
